There are few series of Global knives / models available, and I do not know how to use the professional best in a chef.

I have a set of global knives, and I'm also a chef. When I think of buying a new set of knives I find a set that contains only a head knife, slicer, and a coupling of a knife. I occasionally head out my knife than 90% of the time, and other knives. The rest of the series and are stored out of sight.
